This is simply the maximum number of different position points that are stored as part of the GPS trail (or track as some call it) that shows your previous positions on the map. A new trail point is recorded whenever you move further than the value in metres the "Min Delta" box from the last recorded point. Once the trail length gets to the configured number of samples the oldest positions are removed from the end of the trail as new ones are added.
Setting the samples field to a very large value will allow you to record longer trails, but the longer the trail gets the slower the map window is refreshed, so it's often better to increase the value of Min Delta if you want to record a long trail.
